Brie and Ham Stuffed French Toast

Serves 4

8 slices French bread, thickly sliced
8 thin slices double cream Brie
8 thin slices Black Forest ham (or other smoked ham)

3 large eggs
¾ cup whole milk
2 tbsp sugar
Pinch of salt
1 to 2 tablespoons unsalted butter

Preheat oven to 350°.

Using a paring knife, cut a horizontal slit in each bread slice to form a pocket. Insert one slice of Brie and one slice of ham into each pocket.

In a shallow bowl, whisk together eggs, milk, and sugar until combined. Set aside.
In a large nonstick skillet, melt 1 tablespoon butter over medium-low heat.
Place the bread slices in egg mixture, one at a time, letting them soak 5 seconds on each side.

Place slices in skillet for 3 – 4 minutes per side. Transfer to a buttered baking sheet. Repeat with remaining bread, adding more butter to skillet if needed.
Place baking sheet in the oven and bake for 10 – 15 minutes until golden brown and puffed.

Serve with mixed berries and/or maple syrup.
